Gluten-Free Chocolate Chip Peanut Butter Cookies

Ingredients for Gluten-Free Chocolate Chip Peanut Butter Cookies

2 cups brown rice flour

¼ cup cornstarch

½ teaspoon baking soda

½ teaspoon baking powder, preferably Rumford's

2 tablespoons olive oil

½ teaspoon maple flavoring

2 tablespoons applesauce

½ cup honey

1/3 cup peanut butter

½ cup rice milk

1 cup chocolate chips

Method for Gluten-Free Chocolate Chip Peanut Butter Cookies

1. Preheat oven to 375 degrees. Oil baking sheets.

2. Stir together the dry ingredients (flour through baking powder).

3. Stir together the wet ingredients (oil through rice milk). Combine all the different textures thoroughly.

4. Combine both mixtures, and add the chocolate chips.

5. Drop generous tablespoonfuls on baking sheets, flatten slightly, and bake 10-12 minutes, until they start to brown.

6. If there are any leftovers, store them in the refrigerator. They can be rewarmed briefly in a toaster oven.
